Recipe: Sweet Potato Apple Sandwich

So I was browsing Facebook recently and I saw a friend of mine post about this sandwich he had gotten from a local restaurant… a sweet potato apple sandwich. I had never thought of putting those two foods together! I commented saying that I wanted to go ahead and try it. After thinking about it, I realized that I already had sweet potatoes and apples at my house that needed to be used. I decided to put my (metaphorical) apron on and try my hand at cooking (and save some money in the process!) I’m not a “stereotypical woman;” cooking is hard for me. So I was a little nervous about trying this recipe, but it was SO EASY! This sandwich was SO YUMMY; I have a feeling I’m going to eat this all the time.

I went to my local Target and picked up some cream cheese (on sale) and some basil pesto. Everything else, I already had or could live without.

So here’s my makeshift version of the Sweet Potato Apple Sandwich, thanks to my friend’s Facebook post and Two Peas and Their Pod (found from Pinterest!)



 Sweet Potato Apple Sandwich 


-6 slices of bread of your choice (I used whole wheat)

-Olive oil

-One large sweet potato, sliced

-One granny smith apple, cored and sliced

-Cream cheese

-Blue cheese crumbles

-Basil pesto


Pre-heat oven to 400 degrees. Take your sliced sweet potato and place pieces on a baking sheet coated with olive oil. Bake in the oven for 20-25 minutes. Take out and let cool. Now for actually making your sandwich, feel free to add the next ingredients based on your tastes; you can add more or less of each of these. Separate your pieces of bread. Coat your bread with basil pesto. Place a few apple slices on your bread. Add blue cheese crumbles and cream cheese. Top it off with some sweet potato slices. Place one piece of bread on top of the other to make one complete sandwich. Cut in half if you’d like. If you have ingredients left over, feel free to make more sandwiches. 🙂
